Equipment

  • Wok or large, deep pan

Ingredients

For the stir fry

  • 1 (14 ounces) block firm tofu
  • 2 to 3 tablespoons cornstarch for coating
  • 1 cup wood ear mushrooms soaked if dried
  • 1 cup baby corn halved if large
  • 2 cups napa cabbage white and green parts separated and chopped
  • 2 cups broccolini cut into bite-sized pieces
  • 2 cups cauliflower cut into bite-sized pieces
  • 1 small carrot sliced
  • 1 stalk celery sliced
  • ½ red bell pepper sliced into strips
  • 1 small knob ginger minced
  • 6 cloves garlic minced
  • 1 small onion chopped
  • Pinch of baking soda (optional)
  • Salt and pepper to taste
  • Neutral oil

For the sauce

  • 2 tablespoons soy sauce (half dark soy sauce, if available)
  • 2 tablespoons oyster sauce
  • 1 tablespoon chicken bouillon or base
  • 1 cup water
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1 teaspoon sesame oil

Instructions

  • Fry the tofu: Cut the tofu into four thick slabs and pat dry. Season lightly with salt and coat with cornstarch. Fry in a thin layer of oil for 3 to 4 minutes per side, until golden. Drain, cut into bite-sized pieces, and set aside.
  • Make the sauce: Mix the soy sauce, oyster sauce, bouillon, water, cornstarch, sugar, and sesame oil. Set aside.
  • Blanch the firm vegetables: Bring a pot of water to a boil. Add a pinch of baking soda, if using. Blanch the cauliflower, carrots, broccolini, and white cabbage pieces for 1 to 2 minutes, until slightly tender but still crisp. Drain well.
  • Cook the aromatics: Heat about 1 tablespoon oil in a wok over medium heat. Cook the ginger for 30 seconds. Add the onion and garlic and cook until softened.
  • Stir-fry the vegetables: Raise the heat to medium-high. Add the mushrooms, baby corn, celery, and bell pepper. Cook for 1 to 2 minutes. Add the blanched vegetables and cook for another 2 minutes. Add the green cabbage leaves and cook just until wilted.
  • Add the sauce: Stir the sauce, then pour it into the pan. Toss with the vegetables and simmer for 1 to 2 minutes, until slightly thickened.
  • Add the tofu: Add the tofu and gently toss until coated. Taste and adjust. Serve hot with rice.

Notes

  • Vegetables: Use any mix of firm vegetables, such as broccoli, cauliflower, carrots, cabbage, bell peppers, baby corn, or mushrooms. Avoid soft or watery vegetables like tomatoes and eggplant.
  • Protein: Use tofu, chicken, pork, shrimp, squid, quail eggs, or leftover cooked meat.
  • Soy sauce: Use regular soy sauce, or replace half with dark soy sauce for a deeper color.
  • Oyster sauce: This adds a savory umami flavor.
  • Sesame oil: This adds a light, nutty flavor.
