Instructions
Cook the tapioca pearls according to the instructions on the package.
Once cooked, rinse them under cold water and drain.
Bring them back into the saucepan, then add the brown sugar and enough water to submerge them.
Simmer over medium heat for another 5 minutes until the syrup has thickened. Transfer to a bowl and set aside.
Cut the fresh avocado in half, remove the pit, and scoop the flesh into a blender or food processor. Add milk, sugar, ice, and water. As an option, add a squeeze of lemon or lime to add a tangy twist and prevent the avocados from browning.
Blend the mixture until smooth and creamy.
Spoon a generous portion of tapioca pearls into the bottom of each glass.
Pour the avocado shake into each glass. Serve and enjoy!
Notes
Avocado: Use ripe Hass avocado, known for its creamy texture and rich flavor. Frozen avocado works just as well.
Boba or tapioca pearls: If available, choose quick-cooking tapioca pearls that require only 5 minutes to cook, saving you time while yielding the same results. You may also use sago, gulaman (agar-agar), or grass jelly.
Milk: Use any type of dairy or plant-based dairy like almond milk, cashew milk, and coconut milk.
Sugar: Adjust the amount according to your desired level of sweetness. You can also use other sweeteners like honey, agave syrup, maple syrup, or dates.
Optional ingredients: Add blueberries, banana, or chocolate for extra flavor.
