    Avocado Shake with Boba (also called avocado smoothie) is a refreshing drink made with boba or chewy tapioca pearls. It is creamy, delicious, and easy to make at home!

    Hass avocados are rich and buttery. When added to beverages, they create a luscious and velvety texture that's simply divine.

    Boba or tapioca pearls are chewy little treats that add fun to your drinks. With quick-cooking tapioca pearls readily available, you can easily enjoy them in no time.

    Notes and substitutions

    • Avocado: Use ripe Hass avocado, known for its creamy texture and rich flavor.
    • Boba or tapioca pearls: If available, use quick-cooking tapioca pearls that require only 5 minutes to cook. Did you know that tapioca pearls are derived from cassava roots? You may also use sago, agar-agar (gulaman), or grass jelly.
    • Milk: Use any type of dairy, as little or as much as you prefer, depending on your taste and desired creaminess.
    • Sugar: Adjust the amount according to your desired level of sweetness. You can also use other sweeteners like honey, agave syrup, maple syrup, or dates.
    • Optional ingredients: Add blueberries, banana, or chocolate for extra flavor.

    How to make this recipe

    Step 1: Cook the tapioca pearls according to the instructions on the package.

    Step 2: Once cooked, rinse them under cold water and drain. Bring them back into the saucepan, then add the brown sugar and enough water to submerge them.

    Step 3: Simmer over medium heat for another 5 minutes until the syrup has thickened. Transfer to a bowl and set aside.

    Step 4: Cut the fresh avocado in half, remove the pit, and scoop the flesh into a blender or food processor. Add milk, sugar, ice, and water.

    As an option, add a squeeze of lemon or lime to add a tangy twist and prevent the avocados from browning.

    Step 6: Spoon a generous portion of tapioca pearls into the bottom of each glass. Pour the avocado shake into each glass. Serve and enjoy!

    Ingredients

    • 1 ripe avocado, preferably Hass variety (see note)
    • ¼ cup milk (see note)
    • 2 tablespoons sugar adjust according to your taste (see note)
    • 2 cups ice cubes
    • 1 cup water
    • A squeeze of lemon or lime optional
    • ½ cup raw boba or tapioca pearls (see note)
    • ½ cup brown sugar

    Instructions

    • Cook the tapioca pearls according to the instructions on the package.
    • Once cooked, rinse them under cold water and drain.

      Do you need lemon or lime so it doesn't change color?

        Adding a bit of lemon or lime juice to your avocado shake can help prevent it from changing color and turning brown. 🥑🍋 However, if you're enjoying it right away, it may not be necessary.
