¼cupbrown sugar
A pinch of salt(if using unsalted peanuts)
30small lumpia or spring roll wrappers
Water or egg wash for sealing

2tablespoonssesame seeds (roasted or toasted)
Instructions
Pulse the peanuts, brown sugar, and a pinch of salt (if using unsalted peanuts) in a food processor until coarsely chopped. You can also chop the peanuts by hand, then mix them with the sugar.
Place about 1 tablespoon of the filling on the lower half of a lumpia wrapper. Fold the bottom over the filling, fold in both sides, then roll tightly. Seal with water or egg wash. Fry right away or freeze for later.
Heat about ½ inch of oil in a pan over medium-high heat. Fry the rolls for 2 to 3 minutes, or until lightly browned. If needed, fry in batches.
Return all the rolls to the pan and sprinkle with the ½ cup brown sugar. Cook, turning often, until the sugar melts and coats the rolls. Lower the heat if the sugar starts to burn.
Transfer to a wire rack. Sprinkle with sesame seeds while still hot. Serve warm or at room temperature.
Notes
Peanuts: Roasted or fried peanuts work best, with or without the skin. You can also use almonds, cashews, or walnuts.
Lumpia wrappers: Use lumpia wrappers or spring roll wrappers. Both are available at most Asian grocery stores.
