How to make this recipe
Step 1: Coarsely grind peanuts
Place 2 cups of peanuts and ¼ cup of brown sugar in a food processor or grinder. Add a pinch of salt if using unsalted peanuts. Pulse or grind them until they are coarsely chopped.
Step 2: Wrap the turones
Spoon about 1 tablespoon of the peanut-sugar mixture onto the lower half of the wrapper. Fold the bottom edge over the filling, then fold in the sides.
Roll it tightly into a thin log or stick shape, and use water or egg wash (a mixture of beaten egg and water) to seal the edge securely.
As an option, you can freeze the wrapped Turones de Mani for later use. When ready to enjoy, simply fry them straight from the freezer without thawing.
Step 3: Fry the turones
Heat about half an inch of oil in a skillet over medium-high heat. Test the oil temperature by dipping a chopstick or the handle of a wooden spoon in it; if bubbles form around it immediately, the oil is ready.
Add the rolls, then slightly lower the heat. Fry for 2-3 minutes, or until they start to brown. At this point, sprinkle some sugar over them.
Step 4: Caramelize the sugar
Continue frying and stirring until the sugar caramelizes completely. Keep an eye on the heat to prevent burning, adjusting as necessary until the sugar has fully caramelized and the turones are uniformly coated.
Step 5: Drain and add sesame seeds
Remove from the oil and drain on a wire rack. While still hot, sprinkle sesame seeds over them.
Serve and enjoy your Turones de Mani warm or at room temperature.
