Burger Steak, also called Salisbury Steak, is pretty much a Loco Moco from Hawaii but without the fried egg on top. It’s a hit on Jollibee’s menu, a famous fast-food chain in the Philippines, with juicy ground beef patties smothered in a flavorful mushroom gravy.

- Ground beef: I like using ground beef with an 85% lean to 15% fat ratio—it gives you patties that are juicy and flavorful without being too greasy. You can also use ground pork to make these hamburger patties.
- Mushrooms: I used cremini mushrooms, also known as baby bella mushrooms. You can also use white mushrooms or canned button mushrooms.
- Worcestershire sauce: It adds a complex umami flavor to the gravy. You can also use Knorr or Maggi liquid seasoning for a similar umami boost. Start with a smaller amount and adjust to taste, as these products vary in intensity.
How to make this recipe
Step 1: Combine ingredients
In a large bowl, combine 1 pound ground beef, ½ cup breadcrumbs, ½ onion (grated), 1 teaspoon garlic powder, 1 teaspoon onion powder, 1 teaspoon kosher salt (use half for table salt), ½ teaspoon pepper, and 1 egg. Mix everything together until it's all nicely blended.
Step 2: Form the patties
Divide the mixture into 6 equal portions and shape them into thin patties.
Step 3: Cook the patties
Add a thin coating of oil to a skillet over medium-high heat. Once hot, add the patties and cook until browned, about 2-3 minutes on each side.
You can adjust the cooking time to your desired level of doneness. Then, transfer the patties to a plate and set aside.
Step 4: Combine broth mixture
In a bowl, combine 3 teaspoons beef base, 2½ cups of warm water, 1 tablespoon soy sauce, and 1 teaspoon Worcestershire sauce. Mix until the beef base is fully dissolved.
Step 5: Sauté mushrooms and aromatics
In the same skillet over medium-high heat, spread the mushrooms in an even layer. Leave them alone for a bit without stirring. This helps them sear properly and lets their moisture evaporate so the sauce doesn't end up watery.
Once the mushrooms start to develop a golden-brown color on one side, it's time to give them a stir. Then, add the butter, onions, and garlic. Lower the heat and sauté until the aromatics are softened.
Step 6: Make the roux
Sprinkle ¼ cup of flour over the mushrooms and aromatics. Stir so the flour cooks evenly, which should take about a minute.
Step 7: Add broth mixture
Pour in the beef base mixture while stirring constantly to prevent lumps. Turn up the heat and simmer until the gravy thickens. Add some ground pepper and adjust the taste as needed.
Step 8: Add the patties
Place the burger patties in the gravy and spoon the sauce over them, making sure they're all nicely coated. Let them cook until they're heated through. Then, turn off the heat.
Serve and enjoy your Burger Steak with a side of steamed rice.
